For this collaboration, they're shipping Shigoku Oysters, one of Taylor Shellfish’s most innovative Pacific oysters. Grown in floating bags that rise and fall with the tides, Shigokus are gently tumbled by the natural movement of the water. Think of it as a daily workout for oysters: this process strengthens their adductor muscles and produces a beautifully deep cup filled with firm, plump meat.
